Half. In PvP, you almost never want to use Deadly Poison because it breaks Gouge and Blind. In PvE soloing, it depends; there's a good chance you will be 3 or 4-shotting mobs most of the time, so Deadly doesn't really has a chance to play out. If you're in that situation you'll want to go WP/WP. If you find you're taking long (~15-20 seconds) to kill a mob (at which point you're probably undergeared or the mob is a high armor one), WP/DP becomes the better idea.

Ok, and does IP or Anesthetic benefit Mutilate?

Wound, Deadly, Mind-numbing, or Crippling. Instant/Anesthetic are instant damage and don't give a poison debuff so I'm fairly sure Mutilate doesn't work off of it. But if you have Deadly Brew then Instant will proc Crippling automatically so there you go. Also, I'd just pretend Anesthetic doesn't exist. I don't recall seeing it ever being able to dispel an enraged effect on mobs that matter (except in exceedingly rare instances, like maybe fighting Gluth in Naxx) and if your poison damage is the cause of you pulling threat then you need a new tank. The damage doesn't scale with AP either so by the time you're raiding every damaging poison will run circles around it.

Sweet! Thanks very much. I use Deady Brew so I wanna try WP/IP or vice versa.

As for Anesthetic, what is considered an Enrage effect? I saw another item (that I can't remember the name) that removed a "frenzy" effect. What is that too? Thanks for all the help.

For PvE, I'm not sure. For PvP, it sucks hard. The only two classes with innate enrage effects are warriors and hunters. Anesthetic doesn't dispel a hunter's Beast Within/Bestial Wrath, and while I *think* it might work on warriors I'm not even sure about that. Then again, if you know you're going to be fighting for example a warrior/druid combo in the arena you might want to pick it over mind-numbing.

As for what's considered an Enrage effect... I'm *guessing* everything that has yellow letters in the upper right corner of the tooltip saying "Enrage" (just like with "Poison", "Magic", "Curse" and "Disease").
