I'm trying out unholy before I respec back into blood. Tried frost and don't like it much. So on to unholy. Level 60 currently. What I'm wondering is STR and STAM still the main focus for unholy if I decide to stay with this tree. I'm still wearing the starter blues. Just curious thats all. Would spell power gear increase the diseases damage?

Strength and stamina are the focus for a Death Knight in general, regardless of the talent tree. And, no, avoid spell power - attack power is what your diseases are linked to.

I was Unholy from the time I created my DK and all through Outland. It was a really handy build to be able to AoE groups easily and get through some killing quests that much faster. Now that I'm in Northrend, I've switched over to Blood (at least for the time being) because I found that I was mostly killing single targets and it helps me to rip through individual mobs with ease. Once I've finished leveling, I'll see which build I want to stick to for whatever I do after that.

Strength gives you 2 AP per point, plus once you've got rune of the fallen crusader, that gives you 30% extra strength every proc. Stam is good because you're a melee class and things love to whirlwind and do other things to try to kill you. Crit, hit, expertise, and (to a lesser extent) armor penetration is also good. Try to stay away from haste somewhat, it doesn't benefit you as much as other stats would.
