I love playing resto and healing for raids but the quests where I have to go allone are really hard. Is there a way to solo effectivly? Mele gear or strategy? Or should I skip soloing quests until I go back to enhance?

If you have no other gear than your resto gear, I would suggest to respec elemental to do quests. That's what I did anyways. It was fun, but I felt like I wasn't doing good enough damage, even though I was using my S3/S4 gear which had lots of crit which is good for elemental.
What I did was gather as much Northrend quest rewards as I could for enhance, and once I was able to get a decent set, I respecced. I found that I can kill stuff way faster as Enhancement than Elemental even though I had greens!
If you really love to heal, I would suggest leveling to 78 or so and then healing from there. It would enable you to grab decent gear till 80. I'm level 79 right now and I'm just going to grind to 80 and then respec Resto!

You didn't mention what level you were in the OP. I'm assuming 70 to 80 here. You are better off going elemental 62 to 70.
I stayed restoration (despite my talents being reset- I could have respecc'd elemental). But I did put 15 points in elemental. I'll respec full restoration at 80 I think. I stayed because I have been resto so long, it's the only way I know how to play lol. :). I spent alot of time at 70 being resto. But seriously resto and elemental solo questing playstyles aren't that different. You are still focussing on spell damage (spell crit is important as well along with hit).
I'm finding it extremely easy. But I have raiding gear as well. So it may be more difficult in greens.
The one quest I found kinda difficult was an elite quest in dragonblight. This one is "soloable by most classes", but I died twice. The difficult part was you have to burn him down fast. And burning down fast is not something resto can do (though I can take on 4 mobs at once and not die- I do it all the time). In this case he has small beetles or something that heal him. The beetles also attack you pushing your spellcasting back. I tried first with no elemental, then with earth elemental. But neither worked. Finally got it with fire elemental. The extra damage really helped burn him down quick. And the fire nova thing he does kept the beetles off me allowing uninterrupted spell casting.
