Defense to avoidanceFollow

Exactly how much avoidance does 1 point of defense add and what is the breakdown of what it adds to (if not the same across block/dodge/parry). Need to know to decide on certain enchants (pointing me in the right direction to look for the answer would be appreciated also if you dont know it offhand)

That's correct. The same information with a little more detail:

1 Defense Skill

= 0.04% Block
= 0.04% Dodge
= 0.04% Parry
= 0.04% Miss

Or 0.16% combined block + avoidence, or 0.12% pure avoidence.

6 Defense Skill is then a little less than 1% Block + Avoidence and 9 Defense Skill is then a little more than 1% PURE avoidence. 25 Defense Skill adds exactly 1% to all four.

It takes just under 5 Defense Rating (4.92 if you want a little more precision) at level 80 to add 1 Defense Skill.

If you're thinking of going with Dodge rather than defense for avoidence enchants, you might consider it. Thanks to the new avoidence system it is actually in your favor to stack Defense and Dodge incrementally to maximize the effectiveness of your pure avoidence. Of course, this means you already have 540 Defense in the first place -- if not, start there.
