An end game tanking Paladin will of course get all plate gear. The stats you should be looking for are: Defense, Stamina, Avoidance (block rating, dodge, parry), Strength and Block Value."

So not looking for spell power at all? It sounds like you should be looking for the same gear as a warrior tank? Is that correct?

Yes.

I'm still confused on choosing gear. If I have two pieces of gear. Same stats except one has +25str and the other has +75 spell power. Which is better?

If you can find a piece that's not a weapon that's that biased to SP over Str, but has the same Stam, Defense, and Avoidance, then yeah, the SP one is better.

Hmm, that looks fairly close to breakeven (chart taken from a beta thread, so coefficients might not be up-to-date):
[1 Strength = 2.3 AP]
SoVengeance (5-stack) = 19.5% AP + 9% SP (+1.2% SP / hit)
Judgements (base)= 32% SP + 20% AP
Consecration (per tick) = 4% SP + 4% AP
Hammer of Wrath = 7% SP + 7% AP
Holy Shield = 10 SP + 8.6% AP
Avenger's Shield = 7% SP + 7% AP
Shield of Righteousness = pure Block Value (Strength in part)
Hammer of the Righteous = 4xDPS (Strength in part)
Exorcism = 15% SP + 15% AP
Holy Wrath = 7% SP + 7% AP

That said, it's unlikely to be an issue past level 70 gear. The reitemization should make it so that anything with defense and/or avoidance will have strength and no spellpower. For jewelry and trinkets, 3 SP looks pretty similar to 1 STR.
