So I was reading the paladin FAQ and they said for a tank you should have 200 bonus spell power. I have quite a bit of stamina, I can easily reach 600 (if I'm not there already).

Anyways there is a talent to increase spell power by 30% of your total stamina, so that would b my 200 sp. Which in theory means I can get more stam and str+ gear and not worry about any SP. Basically I should just focus on defense rating+. Is that right?

Pretty much, yeah. My pally has 1000 base stamina, which is 300 spell power. More than any 1H weapon in game before an enchant or gems.

I don't need to get any more spell power, and can focus on Stam, and just get Strength for more threat.

You have to keep in mind that the current FAQ was written without current talents taken into account. 200 spell damage (as it was) was the minimum to be able to hold threat. Now we have strength, weapon DPS, and spell power to take into account for threat, and the fact that DPSers are also putting our more damage (and consequently more threat) then ever before.

For gear, yea you'll want to focus more on hitting defense "cap" (uncrittable) and then stacking stamina/avoidance/strength more so than before, leaving spell power out of the equation for the most part, and just getting it through talents. I'm not sure there will be a "minimum spell power to hold threat" in Wrath like there was for BC because spell power will be tied to stamina. If you've got the stamina to tank, you should have the spell power to tank.

Well with spell power being your main threat it couldn't hurt to still use a spell power weapon. Especially if you are at the defense cap.

Spellpower isn't THE threat stat anymore, though. Strength is unequivocally better than spellpower for threat, plus melee-type weapons increase HotR threat. The only good use for spellpower weaps is AoE pulls (or if you have one that's way higher ilvl thn your best available melee-type weap).
