I just started a Pally and want to tank. I play while my friend uses his priest and we level together. I know now it's not important but I am still protection spec. Whats the best stats to look for in gear especially weapson as far as DPS/speed are concerned. Cword with shield best for a tank?

always use sword/board to tank. Well maybe if your gear far out weighs the bosses in an instance you could try 2 handed tanking, but usually just keep a good sword/board with you at all times. Gear.....to start out anything that's plate will be fine
To tank, make sure it's mail until lvl 40. Then, it's 100% plate armor.
Key Stats to look for (while leveling):
+ Stamina
+ Defense Rating
Once you hit the level cap, that will change. You'll need to start gearing avoidance.

Caster-only bosses and elementals can't be blocked, and the extra armor is meaningless.. but other than that, yeah.

Sword+board typically gives more stam as well, which is what's important for caster fights.
When you get to higher levels and have Avenger's Shield and HotR, your DPS will actually be better with sword+board than 2h, but for leveling until about 40 using a 2h is best.
