I'm on Dark Iron as Horde and enjoy it quite a bit. Long gone are the days from my original MMO game where you could be just close enough to the city limits to yell GUARDS and have the would be attacker rushed into ghost land to sing the ooOOOOoooOOoOOo blues. PvP is fun, pure and simple. There are times where I am just trying to get something done and think I wonder what carebear land is like, but I enjoy PvP too much. I am no good at it, but sometimes when running about it can be fun to knock some alliance toon down.
You could always look at transferring your toon as they have recently opened it up from PvE to PvP. I guess I would say try it out first and start a new toon to see if the taste is still sour. Hillsbrad and STV suck pretty bad in terms of gankage, but if you can get in a decent guild to help level, or make a high ranked friend it becomes cake. And at worst, if someone is camping you, then you just go get a drink and come back in 5. they are not likely to be waiting still.
As I leveled I did experience some gankage. It wasn't fun, but only a couple of times was it over the line camping for no reason. One of those I emoted admitting the alli ??? was superior and wondered if i could just be left to quest and they did. Another a few calls on general chat and I had some backup there to persuade the campers to move on. Its all part of the game imo. To me grinding with out having to look for the incoming red dots on the mini map would be more boring than it already is.
As for end game, I haven't noticed too much of an issue on QD with gankage. There has been some, but it is on both sides and typically not too bad. Too me it seemed like a prison yard, everyone is going about their business and then 2 people from opposing factions go for the same mob or get too close to each other and it starts a fight, then everyone jumps in and all hell breaks loose. There is soo much activity that camping is generally not an issue and revenge can typically be easy and swift. Just make sure you don't wonder too close to the guards after getting your revenge. They are not very forgiving or understanding when you arrive after helping another or getting your revenge.
Overall I would say flat out, either you like PvP or you don't. If you don't then stay out of a PvP server, if you do, then know you have to pay your dues in the leveling process and try to do the gankville's in off hours or with a big squad. I revisit the areas I used to get ganked (or watch others get ganked - stealth FTW!) to keep the circle alive.
