You can reduce the size of the standard UI in the options, I believe (I'll have to check where exactly). A lot of UIs are pretty much just a compendium of addons that others have put together.
Without knowing your spec, the more common addons for raiders are Omen (or whichever type of Threat Meter your raid uses), Deadly Boss Mods (which shows timers and actions of bosses and announces them), Ventrilo (which isn't really an addon but a separate program. But this all really depends on if your guild uses this or in game chat).
As for seeing all members, you can drag the group panes from the raid section of your social bar. If you're a healer, something like Healbot is good to use as you can see all members and set it up where you just have to click on the person's name to heal them.
There's a whole bunch more, but usually the above is the general addons.
