Do I need to do the class quests? Such as Path of the Adept?
Completing that quest gives you the Blood-Tempered Ranseur. You kinda want that.
And if you don't do your class quest Redeeming the Dead, you can't get your Redemption spell. People will laugh you out of instances if you can't res.

Of course I got my redemption spell. Really don't need that path of the adept weapon and am way over level for it.
If you plan on fully exploring the game, you should probably do them. I know the one that gives you a nice Mace requires you to hit up several lower lvl instances. It's a great mace and will carry you well into the late 20s (early 30s?). But it comes down to effort. If your goal is to get to 70 as fast as possible, don't bother with them.
I did some, skipped most. It's simply easier to skip most. As of right now, the cost/effort to get my 60 mount seems prohibitive. I might just buy my racial mount and forget about it. (I'm 63 - that's pretty bad)...

The cost of the pally epic mount is way less than the racial. I just got my charger, and let me tell you, it is one of the coolest looking mounts in the game. I won't go too much into it, as there is a whole thread devoted to it.
I did a couple of the pally specific quests. Nothing too terribly special. Again, it all depends on how far into your character you are willing to go.
