I'm looking at the professions for WotLK, and what they offer, and I have to say Leatherworking may not be the only good thing...

Skinning will give 25 crit rating (which is nice) and leatherworkers can make their own armor. Armor kits for LW are cheaper, but there are no BoP armor kits that are BETTER yet, so for a leatherworker it comes down to the gear (which is not in beta yet).
Mining will give 64 AP and 35 stamina (much bigger bonus than 25 crit). Engineers will be able to make goggles (which are always cool) as well as some cool gadgets. Jewelcrafters will be able to make their own BoP gems which are slightly better than the BoE versions as well as their own trinkets. Blacksmiths will be able to make their own weapons and socket gear! More sockets to your gear than to other players (e.g. you can socket anyone's belt and weapon, but only your bracers and gloves).
Herbalists get a HoT on a 5-min cooldown (not much use for a hunter). Alchemists get bigger bonuses from their potions, but IMO not that big a bonus (compared to an extra socket).
Inscriptions get an extra glyph, although what type of glyph remains to be seen.

My opinion is that mining+blacksmithing is going to be a powerful tool. You miss out on some of the pieces of gear that leatherworkers make, but on a BoP set that consists of chest, bracers, and belt (which usually sets like that consist of) you're not missing out on too many stats except for the chest-piece, and a weapon has those stats. Not to mention that mining > skinning.

I'll have to give it some really good thought. I think with level 80 epic gear, 64 AP and 25 crit won't make or break a character.

I'm really looking at dropping Mining and picking up Inscriptions and keeping my Enchanting. I'll be a lean, mean, stat-augmenting machine. All my flowers for Inscriptions will come from my Warlock, who is an Herbalist.

I'll probably still keep my skinning. Easy to do, if I decide to pick up Leatherworking it will save me some money, and it's great for making some extra cash.

JC+BS/Inscription is probably going to give to most to raiders stat wise (until we can see the new lw gear). BoP gems, plus a chance at getting Perfect gems is great, and having an extra socket is amazing. The extra glyph might also be good, depending on how much DPS the glyphs themselves will add.

Perfect gems are bringing a green gem to somewhere between a green and a blue, not really all that powerful if you're wanting to use blue or purple gems.
Plus the BoP gems don't really offer that much extra stats, and are limitted to 3 jeweler's gems (meaning with AP gems you could get an extra 42 AP, whereas enchanters can put 40 AP on EACH ring).

I'll be sticking with engineering regardless. I've already seen some of the upgrades given to us in the beta, and they aren't all completed yet. Kind of sucks to be able to make the Mail pair of goggles and all they have are some armor and a meta gem socket... no stats yet. However we do get to make our own bullets and arrows again, as well as two new scopes. One adding crit and one adding haste. Not to mention the new "Tinker" enchants we get to various items. I just recently "Tinker"ed my cloak with a parachute affect, looks hilarious when I use it cause my Orc pops out a parachute above him and floats to the ground, great fun.

The mining buff is "Toughness" and right now it only adds stamina in the beta, which is still a nice little buff. I don't see myself changing up these two professions to compensate for new and improved recipes that may or may not come with the expansion. I like engineering for the fun gadgets, whole reason I picked it.

I currently have a combination of Mining and Leatherworking, the latter of which would get me mobbed if I tried to drop it since I'm so obsessive with recipe completion. Sounds like I made a good choice with switching my skinning for mining... though my rogue has skinning to pick up the slack for when I need to make a big batch of stuff.
