Switching and playing two toons is challenging at best.
No it isn't. Really - it isn't.
I am currently playing around when not raiding with a hunter on one account (I opened this account for my nephews but they never come by anymore - got their own account apparently) and a priest on another. You really have to level them both some in solo mode in order to get some of the class options. At least get the pet for the hunter if you roll one.
Right now I have them both at L50 and I start off by sending in the pet and then switch to the priest who waits for pet to get aggro, then SWP, VT, VE and wand, then switch back to hunter and get off an arcane shot (and an auto shot always ticks off also). I only pop the arcane shot and stop so that the SP can get the kill shot and Spirit Tap. SP is mana and health battery (to a certain extent, the only shadow damage comes from SWP really, but enough to keep the pet healthy) and between them both I take down MoBs very quickly.
I should mention that I'm not technically dual boxing with two computers, I have both accounts open on one comp. I have WoW in window mode and I have a widescreen monitor, so I offset the two windows allowing me to just click on whatever part of the window is showing to switch to the other toon.
To answer your original question, roll a toon that can tank, and another that can range dps.
