This is pretty much true, but for single-boss fights where the boss takes FOREVER to down, what the Paladin needs to do is seal wisdom and judge it at the beginning of the fight. Then, the Paladin is automatically regenerating mana through hitting the target, and by getting healed constantly (via spiritual attunement). As long as the Paladin and the healer have some emergency mana pots just in case, and the healer has decent mp5, you can get the boss down without going OOM.
It is important to note here that it is possible for a Paladin Tank to have TOO MUCH defense and avoidance. If the Paladin tank is not being hit enough, they are not being healed enough, and are not regenerating mana via spiritual attunement fast enough. If this happens, pretty much the only thing to do is to sit down during the fight so you take an auto-crit and force the healer to start throwing heals at you. Dangerous, but gets your mana back up REAL QUICK...
IMO, under most circumstances a prot Paladin should almost never seal and judge light to start a fight. If you find you cannot keep your health up for a fight, you either need
A) Better healer
B) Ret or Holy Pally in your group to seal and judge light so you can still seal and Judge wisdom
C) Better Stamina, Defense, or Avoidance
My usual pattern for boss fights is seal wisdom, throw shield, judge wisdom, consecrate, Holy Shield, SoR or SoV and then judge and re-seal occasionally while keeping holy shield up, and improvise depending on what the situation calls for. You can seal wisdom way before you pull the boss (30 seconds is a pretty long time), and you usually have plenty of time after throwing your shield to judge wisdom, consecrate, and get holy shield up before the boss actually hits you.
