How will you do it? Will you go shadow if you are holy? Will you go disc if you are shadow?
Personally, I will heal instances as I level up, so my talent spec will reflect this. I will of course take Spirit Tap :D but then I'll stay on the disc/holy path:

From this, i'll put points as following:
71 - Power Infusion (mostly for instances)
72 - 4/5 Mental Agility
73->77 - 5/5 Rapture
78,79 - 2/2 Grace
80 - 5/5 Mental Agility
I was also considering surge of light, but i don't have the points, as i think grace will be a valuable asset. In case I change my mind:

Anyway, the first thing will be to get rid of some of the gear I have (sets for solo/dps and healing). Fortunately, I'm an enchanter. And clear up space by transfering the mounts and pets (I did the quests for worg, spider and other pets) to the new tab. Same with marks, badges etc. And I'll go get a new haircut :P

I think I will stay holy. I plan on leveling my priest before I do anything else so I'm sure it won't be hard to get instance groups and I'll try to level up non-solo as much as possible. Will of course play with spec and probably have a leveling spec that includes Spirit Tap and a couple of other solo-friendly things that I won't keep at 80.
leveled to 70 as deep disc, went to shadow for a different take on pvp, might to back to disc to level to 80
I leveled from 60 - 70 as Holy, and I don't intend to change it. And it only took me about 3 weeks (real time, including RL issues inbetween) to do it. I plan on tweaking my spec to make it a little more of a Smiter build for leveling, but the majority of the healing talents will remain.
This is the build I'm looking at for leveling. I'll fill out with more raid stuff as I level, grabbing Twisted Faith, Dispersion, and then finishing off Misery and ImpBlast. I'm hoping that sticking with Temple/Sunwell gear doesn't destroy my mana efficiency; as of yet I have to see anything come out of WotLK that's an upgrade for me, but I might have to start collecting it if my mana regen sucks too badly.
I think I'll probably go either 7 or 10 points in disc and put the rest in shadow.

going for pure speed to 80 so I'll be shadow. most likely I'll end up holy so I can start raiding right away.. Plan on hitting 80 in under 2 weeks. Oh yeah taking my work vacation baby!
