So I made it to outlands and began adventures healing in Ramps and BF, making it from 58 to 62.5 this weekend. I healed a few instances in old world and handled it just fine, then I hit outlands, respecced resto, healed Ramps at 59, went ok, but i was in several overpowered groups (with 70s) to start. Then I tried to quest, boo, respecced half ele half resto, boo, respecced 41 ele and the rest in resto, YAY!
So I finally got a group where the tank wasn't a 70 in T4 gear and headed into Ramps...man the difference in healing a Pre-bc instance to healing a BC instance is a lot! Those mobs hit hard! I handled it well with some mana problems since I am new to healing and seem to mash my face on all my keys when the tank is being hit and the run out of mana on each fight. I am getting better, by the end of the weekend, at 62 with water shield, I usually end trash fights with 1/2 - 3/4 mana and most boss fights at 1/4 or so.
All I have to say is healing rocks!!!

Yeah, I'm still enjoying healing on my shammy. I did sort of what you did when I was in Outlands with the whole respeccing thing (at 60 switched to Resto from Enh... didn't work with soloing... so I switched to Elemental - to give it a try - from Resto... and enjoyed it all the way to 70, where I respecced back to Resto).
Once you've figured out your rotation, healing becomes easier and you'll notice you'll have more mana left. As long as you have some healing gear when you're in instances healing and elemental gear for soloing, you should be fine all the way to 70.

Thanks for that link - as an up and coming Resto Shammie the Elitists Jerks info was great (although so well over my head at times :) ) and they really know their onions (I have read some of their stuff before for my rogue main).
