I was thinking herbalism/alchemy for the armor buffs, but I was also thinking of skinning/leatherworking for armor and then specialization later. And then whatever I took up I would drop the gathering part for JC or enchanting, any suggestions?

I have settled on Mining/Blacksmithing. I started with Mining/Skinning because it's my first character and it was recommended to me, but I found the money made from skinning to be totally overshadowed by the mining income. I'm at level 36 and just about got all the stuff necessary for The Shatterer in a few levels (those core of earths are Brutally expensive on my server though). I need just a bit more iron and a handful more mithril. Mostly though, I want the Drakefist/Dragonmaw/Dragonstrike series. For the moment, blacksmithing is eating me out of house and home, but the mining is keeping up admirably considering that I just pick stuff up when I run across it.

I also want to have these maxed out in a few months when Wrath of the Lich King comes out and there is all new stuff to go mine and build.

All in all though, I just find mining to be more fun than skinning was. I like the sense of discovery associated with stumbling upon a vein in the middle of nowhere, skinning never had that though herbalism probably would. And I didn't see anything in the alchemy recipes that I was interested in that required you to actually have an alchemy skill, so I can obtain most of it in other ways.

Admittedly, I'm new at this and mostly went with one of the professions because I find it fun and the other one cause it has "Neat Stuff" I want.

well alchemy gets you a trinket I doubt you will ever find a replacement for in BC if you are ele/resto

Leather working is nice but that was more when BC just came out and gear was harder to get, the armor is bracers, belt, and chest for the special BOP armors and atm vindicator stuff is better then all of it and it is not hard to find a decent chest. You do get drums though that are consumables with interesting short group buffs like increase groups damage or restore a little bit of mana and health for your group.

JC is good for a lot of stuff but nothing game breaking the trinkets are decent.

If your going to be enhancement then Black smithing is sexy for the weapons later on.

Really you can do anything though it is up to you and what you want.

Pretty much what JM said. Do whatever you want in the end, because you don't want to be stuck with some profession just to turn around and learn a different one.

He's right about the trinket too. My Redeemer's Stone, as of right now, cannot be replaced. Even looking on the armory for upgrades, there isn't any. It's a very nice trinket. (just my two cents)
