miss = base 5% against equal level mobs.

see: http://www.wowwiki.com/Miss

+hit reduces your chance to miss, mouse over your hit stat and it will tell you by how much.

I am trying to calculate if I am uncrushable. The formula stated that I need to know what my "miss" is.

To prevent future confusion, you are looking for your "chance to be missed". That is the chance that the mob will miss you.

As opposed to you "chance to miss". That is the chance that you miss a mob.

Also download Tankadin, great mod for comparing gear and showing you exactly what % of avoidance you have at any time.
