Right now i go after pieces that have stamina, int, and then + to spell damage.
When would I start forgetting about int and worry just about the other two.
Pretty much now (or 4 levels ago). Losie's got a great guide at the top of the page to help you once you reach end game and want to pursue raid tanking (or even just heroics, really).
For right now though I would forget about Int entirely. I'm not saying you should go out and buy a bunch of gear, I'mjust saying as you see drops and quest rewards modify your choices from what you've been selecting.
Stam's good. +Spell Dmg is good (even if you just have a lot of that for a leveling set - at 64 I had a tanking set and a solo set, the solo set was mostly geared toward spell damage but had some int on it - Int isn't bad, per se, it's just not somthing you want to target for, you'll pick it up as an incidental stat on +spell dmg gear more often than not. To give you an idea - my health in my solo set which I AoE tanked in often was roughly half that of my tanking set. My Spell Dmg and Mana pool in my solo set were roughly double that of my tanking set).
In addition to those two though you're going to want to start shifting your mindset to avoidance/defense gear. Again, don't go out and buy it just keep an eye out for it when it drops or is rewarded. Keep in mind that when you hit 70 you'll be able to either farm rep for the Continuum Blade or buy/buy makings for the Crystal Forged Sword. Either of these (or the PvP mace) are going to give you all the +spell dmg you're going to need (with the +Spell dmg enchant) for tanking at 70.
The general rule at 70 is Spell dmg on your weapon, avoidance on your gear.
Another note - stop dressing yourself in single-stat gear. Paladin tanks have such a fine balancing act with gear that, while it may seem like you're getting yourself in a good position on one stat, you're really gimping yourself over all. This means no greens "of Defense".
You're not decked out horribly, but soon you're going to start seeing some gear that will suit you better for what you're trying to do.
Again, I want to stress this - it's unecessary for you to run to the AH and buy a bunch of new gear along newer guidelines. The gear will come when you need it. Just quest and do dungeon runs you'll get there.
