For a level 60 lock with skinning/herbalism, which is better? Where can I find the rewards list?

In general if you're serious about end game you'll drop your current professions and pick up Tailoring, Enchanting, Engineering, or Leatherworking (drums). Early on the Scryer items really help dps casters (like the blood gem) However, as you progress the only thing you'll be worried about is the shoulder enchant where the aldors is slightly superior for dps casters.

Actually, the Scryer enchant is superior for crit-based classes. That is, 21/40 locks (due to ISB), pretty much any mage (especially those with Master of the Elements), elemental shamans (clearcasting), moonkin druids (Nature's Grace). Aldor enchant is superior for affliction warlocks and shadow priests. It's a tossup for Demonology locks.

For PvP, it is in the same regard. Aldor is better for affliction or SL/SL locks, Scryer for Destruction, and again a tossup for Demo (depending on playstyle).

Actually according to the warlock spreadsheet in tier 6 level gear (meaning 4 set bonus) the aldor enchant will give you a ~2 dps bonus. (this is with ISB set at whatever it was at teh start) it is so small it's almost nothing. Still the hardcore players would look at it.

Leulier's, you mean? Spreadsheets are, after all, only theorycraft in the end, but a whole 2 dps (even spanned over 5 warlocks) is an entirely negligible min/max stat. Still, most PvE warlocks will consider the extra crit from the Scryer enchant better. Further than that, by the time that 2 dps is actually of any significance, it would likely be that haste would be included on gear - and because of how haste works, it's still something that a lot of people haven't agreed upon as to when to start stacking haste (that is, where crit/dmg are starting to plateau). Also, this depends entirely on raid composition. A warlock would probably want Scryer shoulders over Aldor if there were fewer warlocks than normal and more spriests.
