For my rogue I was thinking either mining and Jewel or eng. Or skin/leather, any suggestions? Thanks
Bear in mind that this is just my opinion but if you're low level, a pair of gathering skills will go best. There's not much you can make with the crafting professions that will be more useful than the money you'll get from mining/herbalism paired with skinning.
If you're high level, like 70, engineering makes a damn fine head-piece. Jewelcrafting is also very useful.

Two gathering professions as you level, and at 70 either take up JC/Engineering or LW/Engineering for PvP or PvE respectively, depending on which is your focus.
