Ive read every guide I can get my hands on and I still cant tell if its better for a one handed weapon and a shield, or a 2 handed weapon, any suggestions?
What are you trying to do?
Tanking will require a 1 hander and a shield, most healing also works this way. Killing things 1 at a time (ie. questing or any situation where you want to do lots of damage to a single thing) goes smoother with a 2 hander. Killing several things at once in melee combat goes much smoother with a 1 hander and shield.
You ask for suggestions.. all I can say is, try things out a few different ways. What have you got to lose? The time it takes to level up a weapon skill and possibly repec costs if you're already 70?

If you are Ret - use a 2H all the time.
If you are Holy - use whatever has better healing stats while you heal (usually a 1H). For soloing, I used a 2H until I started getting 1H weapons with lots of spell damage (I think this was in Outland). Then, I switched over to 1H + shield 100% of the time.
If you are Prot - 1H + shield for tanking and AoEing.
