I would say Aldor for healing b/c of the shoulder enchants, and the proc of the SSO neck. The proc of SSO neck is also nice for tanking, and for the tanking shoulder chant, I'm not sure, but for druids the Aldor looks good there too as it gives more dodge than def rating (opposite for Scryer). I don't know much about tanking as druid, but thought dodge was better.
The difference comes in professions more than classes. Tailors look at which one will give them patterns for their specialty. The thread they give out vary a bit.
From everything I have seen, end-game wise it is not really that big of a deal. The only thing that might make a difference is the shoulder enchants. Otherwise, everything else can be replaced by a few Kara and ZA runs.
You could be like me and attempt to aldor, decide its not good for moonkin druids, and then go camp basilisk eyes for hours on end working up the rep to get back to neutrality with the scryer... Only to spec resto when you're about 75% of the way through that venture.
Switching factions sucks though, so I highly suggest you pick aldor and decide to stay that way.
Heh. I have a friend who spent ages farming stuff to change reps because the jewelcrafting trainer was in the Aldor tier and she couldn't talk to them because she was Scryer. She was a bit pissed off when we mentioned that there was another JC trainer in Thrallmar :)
The only good thing about switching factions is the ridiculous amounts of leather and chunks o' basilisk you can get. I've probably fed my buddy's lock a solid 4 stacks of the blackened basilisk.
