I really don't know what to take, Tailoring/herb or herb/alc and later drop herb for tailoring when i can power level it

Tailoring and Alchemy are both good professions for mages. You did not say your level but it is better to start out gathering. Herbs, Mining and Skinning (probably that order for making money with an eye to saving herbs to level alch later). You need to make money not spend it at first. After you get a mount is a good time to drop one and start crafting. Good Luck

Good thing about tailoring, it's easy to level and most of what you want to have you won't need until level 70. What you should do is level up mining and herb, get your mount, then drop one for tailoring. My mages usually end up with tailoring and engineering.
