this is just me giving a little advice.
when you're a rogue and reach he lvl 40s and up, I have found it a good idea to change from skinning to something like mining or enchanting because getting skins is much eaiser at a lower lvl so if you have alts give skinning to one of them so you can just mail the skins to your self.
and then you can just buy the other mats you need for your higher lvl recipies which is probabaly what you'll end up doin anyway so get a head start up on it.

While your idea sounds great for a person below level 60. It simply is not worthwhile to give up skinning unless you are already 70, have made the gear you require from Leatherworking, and have a bit of gold already in your pocket. Knothide Leather, Heavy Knothide Leather, and Thick Clefthoof Leather are quite expensive per stack considering most people will be saving for their flying mount and materials for enchants at 70. Being able to immediately cut off those expenses by spending a few hours running through Nagrand or Zangarmarsh is quite helpful.

Leg armor, drums, and raid patterns. All good reasons to keep skinning around, if only so you won't have to pony up at the AH for stuff that's easily obtainable during the normal course of dailies.

Yes, skinning should be dropped at 70 for something useful like Engineering, once you're 375 LW.
