I switched to AoE grinding about 10 lvls ago (now i'm 60). I can easily take on 5-6 mobs my own level. 8-9 if they are a few levels lower. This is how i do it:
1. Gear up: gear of your own level with as much +stam/armor as possible. +spell dmg and defense are nice extra's.
2. spec right: exact talents are debatable but prot is the way to go
3. Ret aura
4. Imp Righteous Fury (6% dmg red)
5. Blessing of sactuary (this is a must)
6. Seal of Light
6. Mount, ride around and gather melee mobs.
7. judge seal of light
8. seal of light again
9. Holy shield (keep this up ALWAYS as long as you have 2 or more mobs)
10. Consecrate a few times
11. Switch to next mob (judge SoL) when first mob dies.
12. if health is ok, then put up Seal of wisdom
13. Conescrate if mana allows it.
14. judge wisdom on next mob
15. put op SoL / SoW
16 judge
17. ...
when things ge bad: bubble, heal heal, start again.
at first i underestimated the SoL and the judgement also but combined they have a good enough effect to keep you alive. Be easy on your mana (or you have to have only a few mobs on you, then you can burn yourself through). Make sure HS is up, don't be consecrating all the time if you have many mobs. Then you won't have mana to heal or put up your seal or HS.
just my 2c but it works for me ;-)
edit: and don't forget shield spikes!
