Personally, I prioritize healing over mp5 over intellect and stamina, but that might just be because I hardly ever get hit, and the extra health isn't a big deal most of the time for me. (I quest with a prot pally.) Intellect is great, but if you don't have the mana regen to back it up you'll still have trouble--Water Shield really helps with this, though. Actually, now that I have Water Shield, I may have to start going for Int over mp5 again.
Totems are group-dependent, and you should already have a good idea of which classes prefer what--if you have multiple shamans, things can get even more fun. :) I like Wrath of Air for caster groups and pally tanks, Windfury for groups with lots of melee DPS, Grace of Air for druid tanks and hunter or hunter/rogue groups. Strength of Earth is great for melee groups, if they're not taking too much damage--otherwise Stoneskin.
Mana Spring all the time, unless you need an extra rush of mana in which case Mana Tide is wonderful. Searing Totem on bosses, or sometimes if a DPS goes down early, but otherwise you shouldn't be wasting your mana on extra damage. And, not a totem, but Earth Shield is great to throw up on the tank before a pull, or on a caster who's going crazy with the AoEs (if you don't just let him die).
I survive pretty well without any addons, since there's a built in totem timer, but there is one macro I can't live without, and that's a simple "/p Healer low on mana, please wait." If that doesn't work, I have a 'fun' version as well, but I don't have to use it too often.
I'm Aldor for purely aesthetic reasons--I found the Aldor Rise very soothing and relaxing, and the Scryers Tier hectic and crowded. There are better ways to decide, I suppose, but if you haven't already done so, be sure to pay each area a visit to see if you like what you're thinking of going with.
