The last two if you have to pick between those three, unless of course you find yourself dying way, way too fast, in which case drop one of them for the first one.
It can be, but largely depends on what you're using now and/or what you have access to. I'm still using Totem of the Thunderhead since mana efficiency vs. other healers in 2v2 tends to be a bigger issue for me than getting crit to death. (And in cases where I do get crit to death it wouldn't help one bit. Against Rogue/Mage, for example.)

You can always expect to have substantially less +healing in your PvP gear than your PvE gear, but you still shouldn't neglect it. You
are a healer, and bigger is always better. Survival is worthless without good healing, and there's no point in surviving if you can't heal well. (And for Shaman, since we can't do anything
but heal through, survival and healing tend to be one and the same.) And yes, you should definitely grind
both honor rings.

Not really. Just understand where it is on your list of desireable stats and prioritize accordingly. I recommend you do a little research on Arena Junkies. Lots of good reference and resource material on that site.
