Well, I recently got one of my accounts hacked and my 70 hunter was deleted, and the account is more or less gone to me (damn parental info). Now, I really liked playing on my hunter but I noticed that Majority of servers are probably made up of them. I am making a new character but I'm not sure if i should start another hunter or try something else, because out of all the other classes ive tried hunter just fits me best, and i enjoy playing it most. But i found it hard to find good guilds or groups that didnt have a good hunter in them already. Any ideas?

You should probably roll whatever healing or tanking class that YOU like the best. You will get lots of group invites and in endgame it is quite easy to find a raiding guild. If you dont like healing or tanking then maybe try to roll a Warlock. The Warlock playstyle is quite similar to that of a Hunters with exceptions of course.
Roll a tank or a healer, in most raiding guilds there is always another spot left for a tank or a healer.

Well, if you love playing a hunter, just make one again! If your goal is to raid once you get to level 70, there are always guilds who, even to this day, are just starting to get into Kara. Also, people know Kara so well these days that it's PuG'ed all the time.
As for finding well-established guilds on your server... it might be hard. All the guilds that I've raided in, I came by on luck. My first raiding guild was still only on Kara when I joined, and started to rapidly progress into gruul/mag and on to TK/SSC. I got unlucky in that guild, because I was their top hunter, but they didn't have any room for rogues, and my boyfriend is a rogue. I don't raid without him. I was pretty quickly replaced.
I got incredibly lucky with my current guild, since it's a mix of people who got fed up with another one, and started their own raiding guild. I was invited the night they formed, and so was my boyfriend. We jumped right back into T5-content, and I've been happily raiding with them for over a month now :)
So it's not impossible to find a guild. Hell, especially since it doesn't sound like you have a buddy that you just won't raid without.
