Don't spec destro for PvP. Its not that useful in BG's and useless in arena.
The one setup you forgot, I find the most useful (for any other spec). Full dreadweave for extra stam/resil and set bonus. Felweave is ONLY useful if you want the 35 resil. Besides that the crit is absolutely useless. Any spec you choose is only going to give you 10-15% crit chance in Felweave gear and you will never crit against anyone in any type of PvP gear. So basically you lose spell damage, stamina, and resil, for nothing.

Jumped into an arena last night as a friend on mine needed a couple more matches to hit his 10 for the week. I'm a destro and we both knew going in that it was going to be hard. OMFG I barely had a chance to get a fear off before I was dead and buried (and many times never got it off).
So my advice, don't go Destro in arena. Now in BG I am always in the top group of people in the damage department so I do think it is viable there as you can get yourself lost in the crowd and not get focus fired on.
