With the new badge gears and all that, I now have over 32k armor and 16k hp unbuffed. I also have around 40% dodge unbuffed, which skyrockets to over 65% with a few buffs and procs.
Which raids would it be safe for me to tank now? I've done all the heroics with ease. I consider myself to outgear Karazhan. I'm sure I'd be fine with the other T4 25 mans and ZA, but what about T5 and on?

You meet the Manufacturer's minimim requirements to tank anything. Just depends if your guild wants a druid MT over a War or pally.

Yes you are fine to tank SSC and TK. Keep in mind that you probably wont be MT or OT on Hydross though (stupid blizzard and its lack of nature/frost resistant leather gear).
You should be able to safely tank any T5 content that doesn't have excessive magic damage. Warriors with their reduced magic damage in defensive stance, spell reflect and superior resistance gear will outperform druids in those cases.
On Lady Vasjh you actually have a slight advantage over warriors, since you can powershift out of her roots, and don't need palas to keep blessing of freedom up on you.
