I am currently lvl 67 and speced for PvP carnage. (see RPzips sticky if you are unsure) Currently have an annoying druid that always want's me to duel him.

While I am still in mostly the quested gear he is in all instance blues. a few enchants (he claims its for tanking but I know he just got mad the first 6 times he dueled me and got owned) Ever sense the enchants he has been able to beat me through shifting and using the cat form for a quick dps damage while I am stunned then switching to bear form to absorb most of my brunt attacks.

I have however dueled him as pure DPS only and beat him. Also beat him in tank gear vs his bear form. I am curious to if anyone knows a better way to fight them?

I usually try to take advantage of the extra crit bonus of zerker stance and not having tactical mastery yet...(I think thats what its called... the one where you retain extra rage when switching stances?) as those were going to be my last 3 points.

What should I do different. I intercept every time it's up via hamstring/intercept use. Should I not use death wish? or be in zerker stance?

If he's a feral Druid dueling you in tank gear, there really isn't much you can do against him. Try your best to catch him in caster/cat form, trinket out of his stuns and intercept him when he's least expecting it when he's going for a heal. If you don't have deep wounds on him, fear and bandage.

When he's in bear form make him use Feral Charge to activate second wind (if you have the talent). To do that just keep your distance.
