I wouldn't worry too much about gear and stats while leveling. Yes it will improve your dps/tanking/healing etc, but really you'll be replacing your gear rather quickly especially in on the journey from 60 to 70.
Don't worry about reaching cap stat or certain level of stamina or dmg before 70. However it can be important to take it into consideration on the way because some drops and quests rewards will help you reach that goal at 70.
Look at what you want your character to be at 70 and work towards those goals. A tank will need defense and health. A healer will need +healing, int, mp5, etc. A melee dps needs hit, ap and crit. A caster dps needs spell hit, dmg and crit.
These magic numbers really come into play at level 70 because that's where most of the gear to reach those numbers become available. It's also because of the lvl of mobs you'll be fighting at 70.
Keep it in mind while leveling but it's nothing to lose sleep over. At 70 it turns more into a game of gear progression. Before that it was more of a leveling game.
