Is there a max ap that once you have that much you want to start going for pure crit? or just stick with the Agi gems?

Crit/AP is a ratio. Don't gem crit unless you get a nice set bonus and even then, it's better to gem the orange crit+AP gems.

Never gem for crit. Go for AP while leveling and instancing, and agi for endgame (I can't believe I just said that...).
