If you take a look at my Armory profile you will see that I've started to become more clothier. The only reason why I use cloth drops now is because all the good stuff wont drop, thing like Breastplate of Many Graces. My healing is around 860 and if I do some rep grinding and get some enchants I could be around 1140.
Now for the real question: the Pre-Kara Crit requirement, is 15%, is this with or without the extra 5% holy crit from Holy Power?
So if it's without i would end up with 1140 healing, +/- 15% spell crit and 68 mp5. Is this enough for Kara or is the lack of Plate gear going to hurt me?

EDIT: Second thought, could i do Heroic Ramps with this?, so i can get, my Justice Bringer 2000 specs, Life bearer's gauntlets and Justice Bearer's pauldrons.

The lack of plate isn't going to hurt you as long as your healing stats are sufficient. You shouldn't be getting hit in PvE content so there is nothing wrong with 'downgrading' to mail/leather/cloth as long as the real stats you need are better. Given equal stats, of course use plate over anything else, but if the plate isn't as good from a healing standpoint, use the 'lesser' armor gear.
I'll reserve judgement on those stats though for an actual Holy Paladin to answer :)

your gear is already ok, you just need at least 200 more +heals.
i think you should replace the following
head: mask of pennace(your current helm id ok, but not great--run SV a couple times to get this)
bracers: run heroic BF and get the bracers off of broggok.
gloves: pvp gloves are great, they have decent +healing and +2% chance to crit w/ FoL

I would say you are very minimum for kara, but you could definitely do yourself good, since you are low, by bringing every possible elixer and food, and be ready to pop mana potions often and early. Do not wait until you are low on mana. It will be too late. As soon as a mana potion will almost "fill you up, then pop your first mana potion, and then you can get 1 or 2 more in the fight, whereas if you wait until you are out of mana, which might take 3 minutes, you will run out of mana before the cooldown is up.
BTW, I posted a pre-kara gear list a while back which almost included all cloth.
I entered Kara with all cloth minus maybe 3 pieces.
Granted, I was a tailor and had the epic tailoring set to help out, and spent several hundred gold on the boots of the long road pattern then another several hundred to make them, and I bought some leather kilt pants world drop, that I have forgotten the name of.
I will agree as far as getting hit is concerned, do not worry about it. If the cloth gives you better heals then use it.
