I am a Healadin that is currently 375 in both Mining and Skinning and have made a good amount of money while leveling. Certainly, the mount quests helped save gold at 40 and 60. Got my flyer and am close to epic flyer. I mainly do PvE instances/raiding and only go to BG to get HP for gear.
So my question is: Should I change professions and power level a profession to get some extra benefits (such as JC +26 healing gem or alchemists stone or +20 healing enchant on ring)? I figured I would be making most of my money on dailies. Which professions are ideal and are worth it for the long run? How much should I have saved up before switching in order to power level quickly? I also am considering changing so that I can be more helpful in my guild.
Any opinions and feedback is greatly appreciated.

I know that if my paladin was my main, I'd certainly be considering that new Alchemist's stone for healers. And I've spent a fair amount of time leveling her enchanting for the ring enchants.
Another thing to consider is engineering for the goggles. Especially the upgraded versions coming out in 2.4. Those things are very very nice.
