...assuming flasks aren't available?
I was thinking (depending on availability) Mongoose or Major Agility and Major Defense. Might major fortitude be an option though?

Flasks are always available, they are just expensive (however, they do last through death).
I use Elixir of Mastery (+15 to all stats) and the Elixir of Major Defense(+550 armor).

I'd say Major Fortitude > Major Defense. Major Agility is better than Mongoose for tanking, since it has more +agi (ie. more dodge).
Edit: Elixir of Mastery would beat any of the other battle elixirs, due to it increasing your stam.

if Major Agility is better than Mongoose, would it be better to get diff enchant on the tanking 1h and rely on the elixir? being an alchemist, it's not too expensive for me...

Elixir of Major Agility is better than Elixir of the Mongoose. This is not a thread about enchants.
