After the high of finally getting to 70 wore off and slapping on my sexy new pvp armor, I was wondering?
What do I do now? Aside from saving up for my flying mount...

Heroics, Kara and the rest of the endgame raids, arena and fool around in bgs some more, daily quests for money, farming mats for various gear upgrades or for alts, etc.

Take anything have to do with raids out of the eqaution...my guild simply doesnt have the manpower to pull of a kara raid let alone one of the 25 man ones.

As far as PvE goes then, your kinda screwed. Either recruit more people, or join another guild that is raid oriented. Until then, you can just run Heroics to get your rep up for some rep rewards and badges to improve your gear to the best possible outside of Kara. That's really about it PvP wise.
For PvP, farm BGs for your S1 set and the other 70 stuff to fill in the other spots. Then Arena your *** off to get your rating up and get all the peices of S3 gear.
That's really about it, or start another toon and level to 70.
Just reroll another character and make that your main. It's not too late. You're in the other threads QQing about class balance, right? Go play a "more balanced" class, then.

I reserve the right to complain about blizzards tilt a whirl patches, besides Im over the life tap issue, you wont see me complaining anymore about it if thats what your worried about.

well Ive already got S1 So I guess I just have to fill all the other slots, In the mean time, Ill go in the LFG channel to find a group for shattered halls:)
