I tried something yesterday while I was trying to get a group for VC. There was a group of 3 and no way to get 1 at a time.

So I just bubbled, placed SW:P on all 3 as they ran up to me. Put starshards on 1 of them and uses my Psychic scream, threw a mind blast at another followed with a smite to lower him enough to where the SW:P would kill him before he got back. then switched to the last guy and hit a mind flay on him until he got to me bubbled and then I wanded him down.

Has anyone done this later on? Does it work past the 20's? Im just curious before I get into trying something that isn't gonna be viable for more than a few levels.

You have discovered multi-dotting!

It's possibly, but often not very useful - it tends to burn mana really quickly, and depending on the mobs they can also chew through you pretty fast. It's usually better to just single-target mobs down, maybe throwing VT once you get it on adds that come.

In groups, and especially raids, it's a different situation. If you get pulls that have multiple, long-lasting mobs, it's a significant boost to your damage to keep DoT's on all the mobs while single-targetting the main target down. I've pulled about 1600dps on trash doing that (compared to my normal 800-900ish on trash), and on certain fights (the "trash" before Shade of Akama, and Illidan), I've been told it's even more poweruful.

So it isn't a good idea to do it? Thats what I was concerned about. I didn't want to get into trying something like what I did with my lvl 20 lock and get myself merked.

As I'm sure you all can tell I am pretty new to the Priest class as the only 2 I have are 23 and 20. Alliance/Horde apropriately.

I can honestly say I like Starshards better than touch of weakness.

You'll generally go faster by just single-targeting. My multi-targeting, you lose a lot of the mana efficiency that comes with being a priest, especially at higher levels (high levels of +dmg combined with VT and shadowfiend). I can chain-pull, single-target mobs as long as I can keep it up (my record so far is about 3 hours before I got bored), but multi-DoT'ing three at once I often only last maybe 5 pulls before I have to shadowfiend/drink. That'll be worse and worse the less +dmg you have.

That said, if you're in a situation where it doesn't matter (trash pulls where others have to drink anywho, with no CC/a good tank), or if it's unavoidable (like the situation you described), you might as well. I'd advise against it in most 5-man situations, simply because of aggro issues, unless you've got a pally tank who knows what they're doing.
