So I am leveling a tankadin in between raiding, and I am not sure what professions to go with. I have a steady source of money from my other 70 so I don't need a money maker. I am more looking for usefulness. I have been leaning towards mining/blacksmithing, but any other advice is welcome.

If money is truly not a concern, go for enchanting/engineering. The engineering goggles are great, and enchanting will give you ring enchants to give you either an extra 8 stam, or 24 spell damage. Enchanting also comes in helpful if you decide to run around soloing old world content like Strat, DM, BRD, etc.

Definately engineering for the goggles as well as the +45 stam trinkets you can make (one golbin which is a rocket launcher on 2 min CD, and the goblin one which is also 45 Stam but sheeps the target 2 min CD)

Not only that with the goggles and engi you can also farm motes from clouds and vortex's around the place which comes in handy (usually get x4 motes per cloud)

I paired this up with mining to help my cash flow but either enchanting or Blacksmithing would be good. You can make a great pair of epic pally tanking boots with BS as well as a decent chest piece, and some good weapons if you ever want to mess around with ret.

All depends on how much cash you have really.

I would say avoid BS. It is perhaps the most intensive profession to level and end game there really is **** all for Prot Pallies, unless you get into T5 recipes which require nether vortexes which are BOP.

Even then the only thing it will get you is 1 set of boots. Definitely not worth it.

I leveled Blacksmithing, mainly because I couldn't think of anything else. It was expensive, slow, and mostly useless. I'm not wearing a single piece of crafted gear and neither are any of my alts. The most use I ever got out of it was the shield spike, and to be honest you can just pay someone else to do that if you really need it. Some of the armor pieces were nice, but they were quickly made redundant.

Enchanting is more versatile, since you can turn a profit from unwanted greens and blues, and there are lots of useful enchants for tanking. Mining is a huge profit maker, since people pay out the butt for ore so they can powerlevel jewelcrafting/engineering/blacksmithing on their alts.

If money really isn't an issue, engineering is fun and the goggles are kickass.

The Boots don't require Vortexes, but there's also a Belt (BoE) that does require Vortexes. Though if you got lucky (or had teh money) you could have someone else make the belt.

I probably should have stated my main is 385 enchanting. I can see ring enchants being useful though...
