I really like some of the items engineering manufactures such as the goggles, but I'm just having problems deciding what to match it with. What are my best options?

Mining. But you will be consuming what you gather as part of Engineering, which means no selling gathered ore/bars for profit!
If it it your only character then mining, if you have alts you could put anything on really, tho engineering + mining with epic flying mount is very nice indeed.
Well, I've gotten my engineering to 365 w/o mining a single bit myself (though some was donated by a friend). I got my goblin rocket launcher recently, and it's just awesome. I also have a little mechanical dragonling, which is level 73 when I summon it.
Cheapest way to level engineering is to level it with mining though. If you have the money to get the mats though then go for enchanting, you get some greens along the way.

if you have another charector who has mining, get alchemy.
