so my newb hunter just dinged 37 yesterday and i am currently leveling up skinning/mining for the gold. basically just wanted to get some feedback on the professions you guys chose.
Those 2 skills are the best right now, keep making money until you get a mount. Some people will wait until they get an Epic mount. Keep mining, it is the overall best money making skill at all levels, in fact it only gets better. For a crafting profession, two come to mind. Engineering, for guns, ammos and toys. Enchanting, for D/E all the greens you pick up and won't use. You can get some serious money playing the AH D/e-Sell Mats, but this will vary by server.
as has been said what you have now is about perfect
leatherworking can be good for a few pieces and although i have it i would say it is not that great unless you make stuff for your alts and do not mind the extensive grinding required at high level for the mats
engineering well i have an alt that has it and the toys are great , at level 30 you can create a level 35 usable robot , hehe great fun to have 2 pets attacking anything that comes near at higher levels are others to use , not that much of a gold sink either as some will say if you take your time and pick the right things to make , guns sell well for example
enchanting , well apart from the disenchanting side i doubt you can make any gold from it , but at level 60+ i find most of the drops i get do not sell well on my server and i disenchant them , and yes make decent gold selling shards ect..
alchemy end game almost everyone in instances will want what you can make and it sells well , and the buffs are worth having
jewelcrafting can be good end game and would fit in with your mining all armour high level can be boosted by gems so there is a market for it
i have alts doing all the professions , all are a real pain to max out but the mining/skinning combo will always make gold easily , i guess when you get high enough try an alt with a profession to see if you like it which is what i did

Skinning and mining are great money makers. They sell fast and surely and they are fairly easy to level up. I suggest that you stick with what you have right now, just IMO.
