So I've been looking at various sites that have "shopping" lists for 70 pally's that want to become tanks. A few have said that this http://wow.allakhazam.com/db/item.html?witem=28042;source=live is a must have for any tankadin. The problem is that when I did this quest, I like many before me was still ret and didn't really plan ahead to becoming a protection pally. So am I going to be hurting for defense ratings on my quest to get to 490 without this? Or is there any way to get something equivalent to this?
You can find far better items for tanking than quests rewards (instances, ect...). The only items any paladin should carefully collect from quests are librams (whatever your spec). You will never ever find a way to get back a quest reward libram you skipped, so even if a good plate is proposed, be sure to choose the libram.
The adamantine figurine from Blackheart in SL and the Figurine of the Colossus (SH) are both going to server you better than that.
Try to get them both but know that at least the Colossus was a hard get for many of us. Look forward to many a SH run. I don't want to know if you got it in the first run :-/

does a trinket like that, where it increases your max health by xxx health mean that it will give you that extra health as well or does it just increase the amount available?
For instance:
I'm sitting at 9000/9000 hp then use the trinket, am I now 9000/9900 and need a heal to get to full health again, or if I use the trinket am I instantly 9900/9900?

Regal Protectorite raises your max health and gives you that many hit points as well (essentially healing you for 900). It has saved my but a few times.
