Which gems to switch?Follow

I know about the solid stars of elune but with me I deal with a situation of getting lucky with my gear as I made a switch when I hit 70. I leveled to 70 as prot with nothing but stam, int, and spell damage to make soloing easier, obviously this was drastically unsuited so when I geared up (and got surprisingly lucky with drops) I pushed my avoidance as high as I could via gems as quickly as I could along with my stamina as a matter of being ready in a short amount of time.

Now with gold and time to spare I am finally looking at switching my gems for what they should be. My first plan is to change all the blue sockets to solid stars but I was trying to figure out the best way to keep my avoidance and stamina high without losing uncrit/uncrush since I struggled with the formulas in the Defense/Mitigation thread. I know some of my gem choices are terrible but for me it was a matter of being done quickly.
