Also, since paladin can AOE tank effectively as long as he/she has a good healer behind them, CC just makes things harder and less appropriate.
Amen. The hardest part I have in groups is explaining that I don't need 3 different CC's on a 4 target pull.
At your gear level, you do. Hell even at my gear level I will try to avoid tanking more than 2 mobs at once in a heroic, if the real heavy hitters are in there. (every heroic seems to have a few mobs that hit far harder than all others in the dungeon)
As a reference for my gear level, I recently went through Old Hillsbrad to help a friend get keyed for Kara. I was pulling 2-3 trash packs at a time.
You don't need to CC everything, but there's no reason to tank additional mobs if it's not necessary. The only times you want to be tanking multiple (more than 2) mobs are:
1) significant AoE damage dealers in the party.
2) the amount of incoming damage isn't enough to keep your mana filled.
If you have moderate AoE damage (Rogues with Blade Flurry, or a DPS warrior) you can (and should) tank 2 at a time.
Really, though, there's no shame in using CC.
