Half awake as I right this, so I'll be brief with more details as needed tomorrow when I'm more awake to see what I'm missing... Anywho, 50 enhancement shaman, currently equipped with:

Hand of Righteousness (56-105 damage, 2.7 speed, 29.8 dps; yes, I know it's a healing mace, I haven't had any luck getting better yet ^^;) main

Skullcrusher Mace of the Bear (39-71 damage, 2.7 speed, 31.4 dps, +5 str) off hand

Thanks to a run of ST and Zul farak, I also ended up picking up

Gahz'rilla Fang (39-74 damage, 1.9 speed, 31.4 dps)

and

Fist of the Damned (47-89 damage, 1.9 speed, 35.8 dps, +6 str, and chance on hit of stealing 30 life from target)

I know for windfury, max dps is done by having the main and offhand weapon speeds being the same; beyond that, I don't know what other factors tie in. Would the higer pure damage per hit of the first combo offset the distinct speed advantage potentially leading to more procs of the second? Or is the second fast enough that I'll be losing too many procs to the speed which I hit, particularly when Flurry activates? For that matter, is there some combo of these four weapons beyond the groups I put them in above that would do more damage, assuming I don't get better weapons before I check for answers anyways? Still trying to learn all the intricacies of shaman melee dd in as much as gear is concerned, so any help in answering these questions will be much appreciated, thanks in advance and all ^^;

Matching weapon speeds doesn't matter, but you want both weapons to be as slow as possible. From the Enhancement Shaman Bible:

Weapon Speeds play an important role in maximizing DPS from Windfury procs. The goal is to chain WF procs every 3 seconds, as soon as each cooldown ends. Both the OH and the MH need to be as slow as possible to achieve this(they do not need to be matched in speed, just as slow as you can get it). The idea is to reduce the number of swings made during the time that windfury is on cooldown. Since the cooldown is 3 seconds, weapons speeds are preferred to be close to that speed, generally this means 2.6 - 2.8 under current itemization. The idea is that a faster weapon would proc a WF, and then strike again within the cooldown window, which means that windfury would exit cooldown and your weapon would still be on some significant portion of its swing timer, unable to proc another WF.

Keep in mind, though, that these conclusions were drawn at level 70 where the stat-scaling ability of WF is most prevalent. Depending on your gear--especially under level 70--you may get different results. Best thing to do is test it yourself with a DPS parser.

Personally, I'd use the two 2.7 speed weapons. You may want to try off-handing the fast-but-higher-dps Fist with a non-WF enchant too, it may work at that level.
