I clicked "disable" on grid while using a non-healer character, but now can't get it to work again. It's checked "on" on the addons menu accessed at the character roster page and it's in the addons folder, so I know it's there...somewhere. Any advice on how to enable it again?

Try "/grid config" on the chat line. Then Check the Enabled box.
A better way to disable it on a particular character is to use the addons button on the character select screen, then drop down to the character where you wanted it to not load, and uncheck it from the addons list for only that character.

You might just leave it on for all characters, its a great way to easily see the health of an entire party or raid at a glance. I know I leave it on for all of my alts.
I leave mine on all the time too.
