Tailoring is nice if you PVE, but I don't PVE on my mage. I'm basically done with PVE in this game, I got to Leo/Al'Ar in T5 and got tired of spending so much time raiding. My locks exalted every instance faction, after a while I just got sick of it.
So for a pure PVP mage, theres no benefit to tailoring. Not everyone does PVE or runs dungeons, I'm gearing up completely through PVP. Only thing is I have to run heroic mech a bunch to get my PVP cloak, and I'm still not revered with Sha'tar for the helm enchant yet..
Also theres other professions that basically require 2 slots, especially if its your main. Engineering, jewelcrafting, alchemy all basically require a gathering prof. Sure you can drop the gathering prof at 70, but you give up a HUGE source of income for replacable gear. Depends how seriously you take your raid damage. If you're dead serious about it, you should have enchanting too for ring enchants..
