Pally PvPFollow

I know Rogues are laughable if you are Prot, but I dunno if this holds true even if you are Ret. Still, even without a shield, you have a lot more armor and should soak their blows rather well while your attacks are rather damaging on their leather armor. Make sure to keep them in a rank 1 Consecration so they don't Vanish. Otherwise, I think it should be a pretty straightforward fight.

Hunters are another story and, like most ranged class, have a huge advantage over you: Mobility. A good Hunter will kite you and there is little you can do to prevent it, save for BoFreedom which may help you but not save you. At least not always.

I find fights against Hunters to be highly situational and they vary a lot based on the Hunter's skill level. And we all know a few Huntards so it can vary a lot.
