They are about the same, IMHO. Herb and alch means you can makes some great potions and elixirs, and have a steady income stream. Skin and alch means you can make great leather armor for yourself, but not sure it is as money making as herb/alch (I haven't done a LW alt in a while, so could be wrong).

Note that leatherworking got a lot better with the 2.3 patch, mostly thanks to some drum changes.

First, they made it so you can use drums while shapeshifted. Drums of War increases your party's melee AP by 60 and spelldamage by 30 for 30 seconds, Drums of Panic is a 2-second AoE fear affecting 5 targets. Handy sometimes, and gratifying to "fear them back" when they scare you. : ) There's other drums for haste rating, run speed, and a mild HoT. You need LW350 to use any of them, though, so it's a "leatherworker's only" set of buffs. Kinda cool.

Second, rep requirements for the patterns were lowered from exalted to honored, and mats were cut down to just heavy knothide leather and other cheap skinned stuff like Fel Scales and Fel Hide, so they're basically free to make (especially if you're a skinner) which means you can get to 375 to make yourself the BoP sets, like Primalstrike for us ferals. Used to set ya back like 100g per point past 360 unless you had those patterns.

Edit: Despite this seeming support of leatherworking note that you won't make money with leatherworking, and all of the armor you can make (up until the end-game 375 stuff) can be bought on the AH pretty cheap because of leatherworkers trying to level their craft. I was a very frustrated leatherworker until the drum changes, to the point of thinking about dropping it...now I'm happier but as I get more into instances and approaching raids I find myself chugging more pots and elixirs than ever before and sure wish I could make 'em myself. Don't have the money or patience to powerlevel it though.

I've done crafting professions (LW, BS, etc) on a couple of toons. It always seems to me that the stuff you can make is never as good as quest rewards and drops until you get to the highest levels of the profession. That may be because I've never really put as much effort into lvling the profession as I do into lvling the toon.

For my druid I went Alch/Herb, and I've been happy with it. It hasn't been a big money-maker for me, but I haven't approached it as such. In fact at 70 I end up losing a LOT on alch, because I give so many pots away on raids and instances. Also I'm too lazy or busy to go out and gather herbs, so I end up buying them at the AH.

On all my more recent toons I've gone mining/skinning, and sell everything in the AH. It's amazing how much you can make doing that, even with low-level mats like copper.
