I was thinking of respeccing into Resto from Enhancement. I'm about almost level 62 now. Will I have problems leveling to 70 if I switch now?
Short answer is yes, but it's generally more time consuming.
It's a trade-off. Leveling resto, you cannot die. Unless you're ganked, AFK, or try a 5-pull, your survivability is amazing. Of course, you also have the damage potential of a wet noodle so it takes much longer to kill things.
Best way to level resto is either (a) with a DPS grinding buddy or (b) in instances.

actually.... this will make it ALOT easier to level... at least in hellfire and nagrand where the aggro range is **** and the mobs are so close together....

I have leveled resto from 20 to 37 now and have really been enjoying it.

I leveled from 62 to 70 full Resto, and I loved it. Instances weren't hard to get into for sure, and survivability is pretty sweet. You may move a bit slower than enhancement, but if you like healing (I'm weird, I know), then Resto is the spec for you.
Also, there are many quest rewards you need to get in these levels that aren't bad for pre-heroic gear...ex. Totem of the Plains from the Mastery quests in Nagrand. You'll use that until the xpac every time you cast LHW for sure.
EDIT: Of course, you could still pick these up while leveling enhancement. One route is to level enhance but pick up any +healing quest rewards and instance loot.
